I cut mine in half (and clean out strings and seeds) - microwave in a covered container with a bit of water for 10 min or so - then when it cools, the peel comes right off. I puree the pulp and put it in freezer containers. You cannot can it, but it freezes beautifully! I still have some from last year and put up enough for about 40 pies this year!!!
