ok im thinking that bacon is light and how much fits in a quart ? a pound?

One thing I read on the canning bacon, said to just put a couple of inches of water, doesn't take much at all; no the jar don't float and if you don't have enough to fill you canner to capacity, put some jars with about 1/3 -1/2 full of water, don't need lids to use for spacers.

Check your canner instructions for how much water to add, but the jars aren't actually IN water with a pressure canner. Mine uses 2 quarts in the bottom of the canner.
