Pickle my parsnips the same way I pickle my beets??

I've got a bunch from my gleaner group~ as well as some SUPER BIG AND TASTY
beets! I've even got yellow beets! I'm going to pickle those in their own
jars =0

Only one of my horses likes the parsnips, and I like pickled roots~ (no
carrots tho... blarg)

What are some of your favorite pickling recipes??
