Ok...I found lots of info on this in the "Encyclopedia of Common Natural and Chemical Ingredients"...but since I could not copy and paste from that, I found almost exact wording on Wikidocs...
In Food and Pharmaceuticals
When used as an ingredient in food, it is intended to curb effusion or effervescence in preparation or serving. Antifoaming agents are included in a variety of foods such as Diet Pepsi, Diet Coke, Sprite, and chicken nuggets in the form of polydimethylsiloxane (a type of silicone). Antifoaming agents are also sold commercially to relieve bloating. A familiar example is the drug Simethicone, which is the active ingredient in drugs such as Gas-X.
Silicone oil is also added to cooking oil to prevent foaming in deep-frying.

Notice, too that they are used in many other food applications. These (usually Simethicone) is the most commonly used anti-foaming agent. This prevents the hot oil from boiling up when one adds something cold to it...BUT it is a nasty chemical. Restaurants got tired of being sued for burns from this, so they made requests from the oil industry for help...this is how they "fixed" that problem, by adding yet another chemical to the already 15 or more used to refine cooking oils! Blech! This is why I am so particular about what we stuff into our faces here...
