hemochromatosis (iron overload disease) is exceedingly rare (about .05% of the population. the body only takes in about 10% of the iron that it consumes anyway and very little iron from an iron skillet is going to leach into the food - expecially if it is well seasoned. also, it is hereditary - so if no one in your family has it, chances are really good you can continue using your iron skillets without fear.
