Carob Pecan Brownie Bars
Bars
3/4 c pitted dates, packed down
3/4 c water
3/4 c whole wheat flour
3 Tbs carob powder
3 Tbs oil
3/4 c lightly toasted Georgia pecans
pinch o salt
To make bars, simmer dates in 3/4 cup water about ten minutes to soften. Whiz in blender until smooth. Put into small mixing bow,. Add remaining ingredients for bars, mix well. Put in oil-rubbed 8 inch square baking pan. (I used a round pie pan) Bake in preheated 350 degree oven for 12 to 15 minutes. Cool.
Icing
3/4 c pitted dates, packed down
1/2 c water
2 Tbs cornstarch or arrowroot powder
3 Tbs carob powder
1 tsp pero, postum powder or other coffee substitute
2 tsp vanilla
pinch o salt
(you can add pecans to the icing as well, if you want)
While bars are baking, prepare icing. Simmer dates in 1/2 cup water ten minutes. Whiz in blender until smooth. Return to cooking pan. Add remaining ingredients and mix well. Stir-cook over medium heat until thick. Spread on cooled Brownie Bars.
When done, these look like a Mississippi Mud Pie....and absolutely delicious !
