SALSA
5 medium sized tomatoes
1/2 cup finely chopped onion
1/4 cup finely chipped fresh cilantro
1/2 cup of finely chopped fresh bell pepper
1 teaspoon garlic powder
4-6 cloves (apx 1/4 cup) fresh finely chopped garlic
juice from 1 fresh lime
1/2 teaspoon salt
with a grater, grate tomatoes to a liquid, add remaining ingredients, stir well, then serve
MAYONNAISE
1 cup raw cashews
12 oz. box of morinu silken soft tofu or 1/2 brick regular tofu (apx 7-8 oz.) plus 3/4 cup water
1 tablespoon honey
1 teaspoon onion powder
1/4 cup lemon juice
1-2 teaspoons salt (according to preference)
blend all ingredients until smooth and creamy
10,000 ISLAND DRESSING
1 cup of mayonnaise
1/4 cup chopped olives
1/4 cup of pickle relish (soaked in lemon juice)
2 tablespoons of chopped parsley
2 tablespoons chives
3 tablespoons or one 4 oz jar of chopped pimentos
2 tablespoons of chopped onions
1/4 teaspoon sea salt
(optional) 1-2 tablespoons of minced capers (soaked in lemon juice)
place all ingredients in a bowl, mix well and serve
TACO SALAD
1 head of shredded lettuce
4 cups cooked pinto beans
3-4 cups of sausage burger crumbles or any burger substitute
1 medium onion chopped
2 chopped tomatoes
1 cup sliced olives
4 cups of corn chips or broken tortilla chips
1/2 - 1 cup salsa
2 cups 10,000 island dressing
(optional) 1 cup of mayonnaise for consistency
mix all in a mixing bowl and serve
