[Homesteadingfamily] Re: Does anyone know how to salt cure meat??

 

I just read an awesome book called The Canning, Freezing,Curing, and Smoking of Meat, Fish, And Game written by Wilbur Eastman.  It details each stage of salt curing.  We have cured country hams, also.  But, the process, although easy, is long.  I do not have time to get the book down and write it all out right now, but if I were doing it, I would use the book along the way as a checkpoint throughout the process.  Below is a link to it.  It is worth the bucks!
