A couple of my good friends have Excalibur dehydrators, the 9 tray version. They LOVE them and use them ALL the time. Definitely worth the investment. I can't wait to get one. J

I feel your pain! We have a small garden and it so hard to figure out what to plant and what will have to wait. This year I am trying a few new things, including: companion planting, doing more vertical planting and also sticking random veggie plants into the various nooks and crannies around the yard. LOL! Hey, I'm desperate so I have to be creative.
I'm also trying very hard to plan my garden very carefully around things that will give a good yield, that I can enjoy fresh and also can, freeze or dehydrate and that doesn't take up too much room. I also tried to make a list of the things we eat most such as salsa, tomato sauce, green beans, kale, etc... and make sure we plant a lot of those things.

What do you do with the produce that isnt eaten right away? Can it?
