Since this subject is difficult to explain here I will offer a suggestion. There are several good books out there.
Cold smoking and salt curing by A.D. Livingston.....$5.99
Smoking and salt curing by Monte Burch.......$8.99
If you are thinking about preserving meat you should look at both salt curing and cold smoking.
You will need some type of a smoker to cold smoke. Also a a salt box is a good idea for salt curing.
