I agree with Ninja. I have done a lot of research on Agave by different
brand names. We use the MADHAVA. It is lightly heated to 105 degrees,
then filtered while warm. But, there are many brands out there who sell
junk, just as in other things. One must read the labels and do the
research. This brand is certified organic and considered raw because it
is not heated at high temps of 115 degrees or above. The more it is
heated, the darker it gets...or becomes dark "amber" in color. It is
high in natural fructose....but still has a lower glycemic index than
most sweeteners. So, use in moderation would be wise. We use this
particular brand and have for many years, but sparingly. It is much
better than most granulated sugars, especially the GMO'd beet sugars
sold today.It is like anything, pick your poison...but educate yourself
