[Homesteadingfamily] Re: Salt curing meat

 

Mostly wild game, but some domestic beef and pork as well.
We have a calf we just got that we are going to raise. There are wild hogs out here as well as deer, rabbit and squirrel.

I remember as a child getting the salt cured ham several months after sending one of the pigs off to butcher. It was so good, I couldn't get enough of it.
Any and all info would be greatly appreciated.
