in dried grain form they will keep for at least a year. I always freeze
them for 3 or 4 days right away, to kill anything. then let them sit 24 to 48
hours (depending on humidity) to allow any moisture from freezing to
evaporate. then store in food grade buckets with good tight lids, bakery
buckets are great. I don't use the plastic mylar stuff, i just can't afford it,
but it would help keep them good even longer.
