Harvest the root as you are seperating them for replanting. It takes upwards of 2 years for Iris / Orris root to fully dry, and yes, they have other uses as well as natural dyes.

Jon-some are used as a fixant. Knowing which (color iris) is used for what takes a bit of learning and remembering.
